Almond Barfi Recipe
Ingredients
Main Ingredients:
- 200g HarvestHavenGoods Premium Organic Almonds (Badam) – soaked overnight
- 1 cup full-fat milk
- ¾ cup sugar (adjust to taste)
- 2 tablespoons ghee (clarified butter)
- ½ teaspoon cardamom powder
- A pinch of saffron strands (optional)
- 2 tablespoons milk powder (optional, for richness)
For Garnish:
- Sliced almonds
- Silver leaf (varak) – optional
- Chopped pistachios
Instructions : Almond Barfi Recipe
Step 1: Prepare the Almonds
- Soak 200g of HarvestHavenGoods Organic Almonds in warm water overnight or for at least 6-8 hours
- Drain and peel off the almond skins
- Grind the peeled almonds with 2-3 tablespoons of milk to make a smooth paste (add milk gradually to avoid making it too watery)
Step 2: Cook the Almond Mixture
- Heat a heavy-bottomed pan or kadhai on medium heat
- Add 1 tablespoon of ghee
- Add the almond paste and stir continuously for 3-4 minutes
- Pour in 1 cup of milk and mix well
- Keep stirring to prevent sticking and burning
Step 3: Add Sugar and Flavoring
- Once the mixture thickens slightly (after about 8-10 minutes), add the sugar
- Stir continuously as the mixture will become liquidy again
- Add cardamom powder and saffron strands soaked in 1 tablespoon of warm milk
- If using milk powder, add it now and mix well
- Keep cooking and stirring until the mixture starts leaving the sides of the pan
Step 4: Add Remaining Ghee
- Add the remaining 1 tablespoon of ghee
- Continue stirring until the mixture becomes thick and starts to gather into a mass
- The mixture should be thick enough to hold its shape (this takes about 15-20 minutes total cooking time)
Step 5: Set the Barfi
- Grease a plate or tray with ghee
- Transfer the mixture to the greased plate
- Spread evenly using a greased spatula or the back of a spoon
- Smooth the top surface
- Garnish with sliced almonds and pistachios while still warm
- Optionally, place silver leaf (varak) on top
Step 6: Cut and Serve
- Allow to cool for 1-2 hours at room temperature
- Once set but still slightly warm, cut into diamond or square shapes
- Let it cool completely before removing from the tray
- Store in an airtight container
